Muffins med bacon og soltørrede tomater

What you need:

  • 1 egg

  • 2.5 dl milk

  • 1/2 dl olive oil

  • 175 g of wheat flour

  • 75 g rye flour

  • 1 teaspoon salt

  • pepper

  • 2 teaspoon baking soda

  • 200 g of bacon bits

  • 1/2 dl chopped chives

  • 4 tablespoons chopped sun dried tomatoes

  • 100 g grated parmesan

How to make it:

Fry the bacon crispy. Whip the wet ingredients together. Add flour, baking soda, salt and pepper. Then mix in bacon, chives, sun dried tomatoes and parmesan. Fill the muffin mixture into the molds and bake for 20 minutes in a 200 degree hot oven.

Serve eg. to a onion soup, brunch or tapas.
