Baked salmon with Parma ham, lentils and green kale in an orange sauce

What you need:

Tools:

  • Hand blender

Ingredients:

  • 500 g salmon (4 pieces)

  • 200g fresh green kale

  • 2 dl Black lentils

  • 4 slices of Parma ham

  • 1 onion

  • 1 yellow or orange bell pepper

  • 1 tbsp butter

  • Juice from 1 orange

  • 1 dl vegetable stock

  • 2 ½ dl cream

  • salt and pepper

Method:

  • Boil the lentils (see pack)

  • Put through a sieve

  • Set aside

  • Add salt and pepper to each salmon piece

  • Place a slice of Parma ham on top of each salmon

  • Bake the salmon in a 200 degree oven for approx 10 min.

  • Dice the onion and belle pepper

  • Saute in butter

  • Add juice from one orange and the vegetable stock

  • Bring to a boil

  • Add the cream

  • Let reduce until desired creaminess

  • Blend to a smooth creamy sauce

  • Season with salt and pepper

  • Sauce the finely chopped green kale in a lump of butter

  • Mix the green kale and lentils

  • Remove the skin from the salmon pieces

  • Serve in deep hot plates
