Baltic shrimp bisque

Baltic shrimp bisque

  • 4oo g fresh and live baltic shrimps

  • 100 g cooked abd peeled baltic shrimps for topping

  • 1 onion

  • 1 carrot

  • 1 handful fresh parsley

  • 1 tablespoon tomato paste

  • 2 cloves garlic

  • 1 tablespoon fresh chopped thyme

  • 2.5 dl cream

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cayenne pepper

  • 1/2 bottle of white wine

  • 2.5 dl vegetable stock

  • 1 dl cognac

  • butter

  • salt and pepper

Fry the Baltic prawns over high heat briefly in butter and oil, reduce heat and add the chopped onion, garlic and coarsely sliced carrots. Add the spices and tomato paste. Pour in white wine and vegetable broth. Simmer for about 10 minutes. Blend the whole shrimps and the soup. put the mixture through a fine sieve. Now reduce the bisque to a creamy consistency together with the cream. Add the cognac serve with fresh baltic shrimps on top.
