Beer cakes

  • 100 grams of butter

  • 1 dl water

  • 1 red onion

  • 1.5 dl ale beer

  • 150 grams of flour

  • 4 eggs

  • 50 grams Gruyere cheese

  • 50 g Parmesan cheese

  • Fresh pepper and a little salt

  • A little dried oregano

Chop the onion and fry it in butter until it is golden. Add water, beer and butter in a saucepan. When the butter has melted, you add the flour at once and stir. Leave the mixture to cool slightly before you whip in the eggs one at a time. Grate the cheese and fold into the mass together with the fried onions and season with pepper and a pinch of salt.
Put the mixture in a piping bag and spray small blobs onto the cookie sheet or use small muffin cups. Sprinkle with a little dried oregano and bake in a preheated oven; 10 minutes at 220 degrees, then for about 20 minutes at 175 degrees or until golden and raised to about twice its size. Be careful not to open the oven while baking, otherwise they tend to somehow implode. Serve with a glass of cold beer.
