Beetroot tartare

Beetroot tartare

What you need:

  • 1 boiled beetroot

  • 1 pickled beetroot

  • 1 raw beetroot

  • 1 apple

  • 1 tablespoon grated and finely chopped horseradish

  • 1 tablespoon chopped capers

  • 1 teaspoon of olive oil

  • 1 teaspoon of Dijon mustard

  • salt and pepper

  • 1 tablespoon yogurt

  • 3 tablespoons soft goat cheese

  • cress

  • walnuts, lightly roasted

  • egg yolks

Method:

  • Dice the beetroots and apple

  • Mix with horseradish, capers, mustard and olive oil

  • Season with salt and pepper

  • Mix yogurt and goat cheese

  • Arrange the beetroot mixture in a food ring

  • Top with a layer of goat cheese cream

  • Top with cress and walnuts

  • Finally an egg yolk on top

  • Serve with good bread or good rye bread
