Berry cake with chocolate icecream

  • 4 eggs

  • 250g mixed berries (preferably frozen)

  • 100 g of wheat flour

  • 100 g of almond

  • 100 g of cane sugar

  • 1 teaspoon vanilla powder or grain from 1 vanilla pod

  • 1 teaspoon baking powder

  • 125 g butter

 

Beat the softened butter and sugar until white. Whisk gently 1 egg at a time. Mix in wheat flour, almond flour, vanilla and baking powder. Lastly mix in the berries. Pour the batter into a baking sheet lined springform and bake for about 45 minutes in a 175 degrees oven. Serve the cake with chocolate ice cream and berries.
