Blueberry cheesecake with berries

What you need:

For the bottom:

  • 125g Digestive biscuits

  • 60g melted butter

For the filling:

  • 1 egg yolk

  • 4 tbsp sugar

  • 2 tsp vanilla sugar

  • 200g cream cheese

  • 2,5 cl cream

  • 3 sheets of isinglass

  • 200g frozen blueberries


  • 150g white chocolate

  • fresh berries


How to make it:

  • Cover the isinglass in cold water in a bowl

  • In a bowl, crush the biscuits to crumble

  • Mix in the melted butter

  • Put the ring of a springform on the serving plate of the cake

  • Put baking paper inside the spring form

  • Cover the entire bottom with the biscuit mixture and press it thoroughly


  • Whip eggs, sugar and vanilla sugar until the sugar is fully dissolved

  • Gently mix in the cream cheese

  • In a bowl whip the cream until it has a creamy and light consistency

  • Mix the cream with the cream cheese mixture

  • Put the mixture in the fridge

  • In a pot, bring to a boil the berries with 2 tbsp water

  • Blend the berries thoroughly

  • Add the isinglass

  • Mix it thoroughly

  • Now take 2 tbsp of the cream cheese mixture and mix it into the berries mixture

  • Now do the same once again as to slowly lower the temperature of the berries mixture

  • Finally mix all the remaining cheese cream mixture in to the blueberry mixture thoroughly

  • pour the combined mixture into the springform, over the biscuit bottom

  • Put the cake in the fridge for minimum 2-3 hours


  • Top with lots of fresh berries

  • Shave off thin flakes of the white chocolate
