Butter fried chanterelles and blue berries

What you need:

  • 1 small red onion

  • 200 g chanterelles

  • 1 clove garlic

  • 1/2 dl white wine

  • 1 dl cream

  • 1 small handful of blueberries

  • fresh thyme

  • 25 g butter

  • salt and pepper

  • good sour dough bread

 

Method:

  • Clean the chanterelles with a soft brush.

  • Chop onion and garlic finely.

  • Fry onion, garlic and the chanterelles in butter.

  • Add white wine and let it reduce.

  • Add cream and a little fresh thyme.

  • Let it boil until it gets creamy.

  • Season with salt and pepper.

  • Add the blueberries just before serving.

  • Serve preferably on butter fried bread
