Butter fried chanterelles and blue berries
What you need:
1 small red onion
200 g chanterelles
1 clove garlic
1/2 dl white wine
1 dl cream
1 small handful of blueberries
25 g butter
salt and pepper
good sour dough bread
Clean the chanterelles with a soft brush.
Chop onion and garlic finely.
Fry onion, garlic and the chanterelles in butter.
Add white wine and let it reduce.
Add cream and a little fresh thyme.
Let it boil until it gets creamy.
Season with salt and pepper.
Add the blueberries just before serving.
Serve preferably on butter fried bread
