Cannelloni stuffed with meat sauce

Cannelloni stuffed with meat sauce

Meat sauce:

  • 500g minced beef

  • 1 onion

  • 2 cloves garlic

  • 1 can of peeled tomatoes

  • 1 dl white wine

  • 1 can of concentrated tomato puree

  • olive oil

  • 1 fillet of anchovy

  • 1 teaspoon dried thyme

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried oregano

  • 1 handful fresh basil

  • salt and pepper

  • 12 large Canneloni (they should be cooked almost al dente and drizzled in a little olive oil)

Finely chop the onion and garlic. Saute onion and garlic in olive oil. Add the meat and anchovy fillets. Fry it thoroughly along with the dried spice herbs. Pour in the white wine and let it reduce. Add the tomato puree and stir thoroughly. Pour in the peeled tomatoes. Let simmer for 15-20 minutes (to have a dense consistency). Add a handful of fresh basil and season with salt and pepper. Fill the al dente cooked cannelloni with meat sauce and put them in an oil greased pan and bake for 10 minutes in a 175 degrees oven.

 

Creamy spinach:

  • 2 large handful of fresh spinach

  • 1 tablespoon butter

  • 1 cup cream

  • salt and pepper

  • Saute the spinach in butter. Add the cream, salt and pepper. Let the small simmer until it becomes slightly creamy.

Gremolata:

  • 1 handful parsley

  • zest of 1 lemon

  • 1 cup grated parmesan

  • Mix chopped parsley, lemon zest and grated parmesan together. (best in a mixer)

Serve the cannelloni on top of the creamy spinach and sprinkle with gremolata.
