Carrot cake

Carrot cake

What you need:

  • 5 dl wheat flour

  • 2 tsp of soda

  • 2 teaspoon baking soda

  • 4 tsp cinnamon

  • 1/2 teaspoon salt

  • 3 dl sunflower oil or grape seed oil

  • 4 dl Muscovado sugar (soft brown sugar)

  • 4 eggs

  • 500 g finely chopped carrot or courgette (250 g carrot and 250 g of courgette)

Cream:

  • 200 g cream cheese

  • 150 g of soft butter

  • 160 g of cream flour

  • 1 teaspoon vanilla powder

  • 50 g chopped walnuts for garnish

Method:

Whip egg, oil and brown sugar thoroughly together. Add the dry ingredients. Whip a little. Stir grated carrot into the mixture. Pour the dough into a greased spring form and bake in a 180 degree hot oven for approx. 1 hour. Beat all the ingredients for the cream together. Spread the cream on the cooled cake and sprinkle chopped walnuts over the cream.
