Chili con Carne with mint shun

Here is a quick to do, but utterly hot chili that is great for sharing with one you hate ;)

The burn is reduced by the mint shun that cools down the dish

What you need:

  • 500 g minced beef, 8-12% fat

  • 2 onions

  • 5 garlic cloves

  • 4 large red chilies ( dont even think of deseeding!)

  • 2 cans of peeled tomatoes

  • 2 cans of red beans

  • 1 small can of corn

  • 2 tsp. smoked paprika

  • 1 tbsp Mole paste ( in Mexican speciality stores)

  • olive oil

  • salt & papper

  • mint leaves

  • shun or greek yoghurt

  • taco chips


  • dice the onions

  • peel and slice the garlic cloves

  • slice the chilies



  • fry the onions in olive oil in a frying pan or wok

  • add the meat

  • add garlic and chilies

  • let fry on high temperature for 3 min.

  • add smoked paprika

  • season with salt and pepper

  • add the peeled tomatoes

  • add the Mole paste

  • let simmer for 20 min.

  • add red beans

  • let simmer for 5 min.

  • add corn

  • let simmer for 10 min.

  • finely chop the mint leaves

  • mix with cold shun or greek yoghurt

  • serve as finger food, directly in the pot you prepared the dish, with the mint shun and lots of taco chips on the side.

  • enjoy and wipe your forehead in between
