Chili sin Carne

Chili without meat! I think it is even better than the original ones with meat.

What you need:

  • 1 eggplant

    2 carrots

    3 rods celery

    2 onions

    5 garlic cloves

    4 large red chilies (don't even think of deseeding!)

    1 can of concentrated tomato paste

    1 cans of peeled tomatoes

    1 cans of red beans

    1 squash

    2 tsp. smoked paprika

    1 teaspoon of coriander

    1 tbsp Masala spice

    25 g dark chocolate

    2 dl vegetable broth

    olive oil

    salt & pepper

    shun or greek yogurt

    taco chips

    fresh coriander

    avocado

 

Method:

  • Chop onion, garlic and chili.

  • Grate carrots, celery, squash and eggplant coarsely.

  • Sauté onions and garlic in oil with the spices.

  • Then add the coarsely grated vegetables.

  • Add the tomato puree, vegetable broth and the peeled tomatoes.

  • Let it simmer for approx. 15 minutes.

  • Add beans and chocolate and let i cook for approx. 5 minutes.

  • Season with salt and pepper.

Serve the Chili with yogurt, fresh coriander, avocado and Taco.
