Chili sin Carne
Chili without meat! I think it is even better than the original ones with meat.
What you need:
3 rods celery
5 garlic cloves
4 large red chilies (don't even think of deseeding!)
1 can of concentrated tomato paste
1 cans of peeled tomatoes
1 cans of red beans
2 tsp. smoked paprika
1 teaspoon of coriander
1 tbsp Masala spice
25 g dark chocolate
2 dl vegetable broth
salt & pepper
shun or greek yogurt
Chop onion, garlic and chili.
Grate carrots, celery, squash and eggplant coarsely.
Sauté onions and garlic in oil with the spices.
Then add the coarsely grated vegetables.
Add the tomato puree, vegetable broth and the peeled tomatoes.
Let it simmer for approx. 15 minutes.
Add beans and chocolate and let i cook for approx. 5 minutes.
Season with salt and pepper.
Serve the Chili with yogurt, fresh coriander, avocado and Taco.
