Chili-tomato relish

Chili-tomato relish

  • 1 kg plum tomatoes

  • 2-6 red chillies (depending on how strong you want it

  • 1 bunch fresh basil

  • 1 onion

  • 3-4 cloves garlic

  • 1 tablespoon cider vinegar

  • juice of 1 lime

  • olive oil

  • salt and pepper

 

Chop the onion and garlic finely. Fry in olive oil. Add chopped tomatoes, apple vinegar, juice from lime, chopped basil and finely chopped chili. Let it simmer on low heat 1-2 hours or until it has the thickness and texture desired.
