Chocolate mousse with berries and nuts

  • 200 g dark chocolate 70% with chili flavour

  • 700 g tofu (smooth or silky)

  • 150 g maple syrup

  • zest from an organic lime

  • 1/2 vanilla pod

  • 1 tablespoon Muscovado

  • 1 tablespoon dark rum

  • 1/2 teaspoons instant coffee

  • a little of salt

Melt the chocolate in a water bath. Remove excess moisture from tofu. Scrape the vanilla grains of the rod and mix it with rum and Muscovado. Mix tofu, rum, zest from the lime, instant coffee, maple syrup and a little bit salt in a food processor and blend it until it is completely smooth. Add the melted chocolate and blend together. Pour into serving glasses and allow to cool 1/2 hour. Serve with fresh berries and roasted nuts.
