Cod wrapped in ramson leaves with pea mash and baked parma ham
4 fresh cod pieces (approx 100g each)
4 slices parma ham
400 g fresh peas
1 dl white wine
25 g butter
1 clove of garlic
2-4 pcs. radishes
chopped pistachio nuts
salt and pepper
Cut the radishes on a mandolin iron and put the radish slices in ice-cold water, set aside.
Season the cod pieces with salt and pepper.
Wrap them into the ramson leaves and steam them, under lid, for 2-3 minutes in a pot with a little water and a little butter.
Bake the parma slices in oven at 180 degrees and until they are crispy (about 4-5 minutes).
Blanch the peas in white wine and butter, white wine and garlic clove.
Blend it all and ad salt and pepper to taste.
Serve the pea mash with the steamed cod pieces. Decorate with the crispy radishes, parma ham, fresh pea shoots and chopped nuts.
