Crab meat burger in a "bun" of crispy baked match stick potatoes
What you need:
1 kg of fresh uncooked crab claws
Eventually some trout roe
....cooking the claws
Wash and rinse the crab claws.
Bring salted water to the boil.
Add some parsley and other herbs you have to the salted water and pour in the crab claws.
Boil them for 15 minutes.
Turn off the heat and allow the claws to rest in the water for 15 minutes.
Remove the claws and let cool for some hours in the fridge
Crush the shells with a meat hammer or what ever you have and peel out all the meat
Put the meat back in fridge
...the potato "buns"
On a mandolin iron that can slice thin fries, create match stick size potato sticks
Melt some butter
Drizzle the potato stick in a little of the melted butter
Drizzle some salt over too
Heat the oven to 150 degrees
On sheet of baking paper, place small round tops of potato sticks
Bake them for 45 minutes until golden brown and crispy
Let them cool down.
Mix the crab meat with finely dices red pepper and a very little bit shun and mayo
Season with salt and pepper
Form in a food ring the meat
Place on to of a button half potato bun and a mixture of fresh herbs like dill, chervil, parsley etc.
Top with another potato bun and finally some trout roe.
Add on the side a grilled lemon
