Crab salad with avocado, apple, tomato and herbs

Crab salad:

  • 2 cans crabmeat

  • 2 tablespoons mayo

  • 1 tablespoon shun

  • grated peel from 1 lime

  • 1 small handful of fresh dill

  • 1 small handful of fresh chervil

  • salt and pepper

Mix the crab meat (make sure to squeeze all the water out of crab meat) with mayo, curds, grated peel from lime, chopped dill and chervil. Season with salt and pepper.

 

Graniture:

  • 1/2 cucumber

  • 1/2 apple

  • 1 tomato

  • 1 red or pink grape

  • 1 avocado

  • little chopped peanut nuts

  • olive oil

  • juice of 1 lime

  • honey

  • salt and pepper

  • fresh dill

  • fresh chervil

Cut small cubes of cucumber (seedless) and apple. Blanch tomatoes and skin it. Cut small cubes of tomato flesh. Fillet the grape. Mix olive oil, honey and lime together. Season with salt and pepper. Add cucumber, apple and tomato cubes in the dressing. Arrange the crab salad on plate with avocado slices on top. Dirzzle with dressing around the salad added with grapefruit fillets. Sprinkle with a little chopped peanuts, chervil and dill. Serve.
