Cream puffs with crab salad

Cream puffs:

  • 125 g wheat flour

  • 2 dl water

  • 3 eggs

Method:

  • Boil water and butter.

  • Add flour and whip it well together.

  • Cool slightly before adding one egg at a time.

  • Pour the dough into a syringe and spray approx. 6 pieces of dough on baking paper.

  • Bake them in a 200 degree hot oven for approx. 20 minutes.

 

Crab salad:

  • 2 canned crab meat ( or better, cook some fresh claws)

  • 2 tablespoons mayonnaise

  • 2 tablespoons of shun

  • 1 finely chopped red chilli

  • 1 small bunch of chopped fresh coriander

  • 2 tablespoons finely chopped red pepper

  • A little lemon juice

  • salt and pepper

  • salad of your choice

  • Mix all ingredients.

  • Top eventually with some trout roe
