Croquetas de Jamón

Croquetas de Jamón

  • 6 tablespoons olive oil

  • 1 1/2 dl flour

  • 2 dl milk

  • 1 dl grated manchego cheese

  • 1 dl vegetable broth

  • 4 slices of Spanish Serrano ham, cut into small pieces

  • 2 tablespoons finely chopped parsley

  • salt and pepper

For the breading:

  • 2 eggs

  • bread crumbs (Panko)

  • sunflower oil for frying

Heat oil over medium heat. Add milk, stirring strongly. Add broth to the sauce till thick and creamy. Then ad the cheese. Let it melt into the sauce. Mix in Serrano ham and parsley. Season with salt and pepper. Pour the mixture onto the baking paper (about 2 cm thick) Place another sheet above and place it in the refrigerator for 2-3 hours.

Form balls of the mixture. Turn them in beaten egg and then in bread crumbs. Deep-fry them in 180 degrees oil until golden. Place them on the fat absorbent kitchen paper. Serve with garlic mayo and pesto.
