Dark chocolate and blueberry cake with white chocolate mousse

  • 100 g butter

  • 100 g of cane sugar

  • 100 g of dark chocolate 70%

  • 3 eggs

  • 50 g of wheat flour

  • 1 tsp. baking powder

  • 250 g blueberries

Topping:

  • 100g white chocolate

  • 4 egg yolks

  • 2.5 dl whipping cream

Garnish:

  • Fresh blueberries

Melt the butter, sugar and chocolate over low heat in a water bath. Beat the eggs in one at a time. Sift flour and baking powder in. Pour mass in a greased springform. Bake in a 175 ° oven for 20-30 minutes.

Beat the egg yolks with sugar until white and creamy. Melt the chocolate and pour it into the egg mixture. Whip the cream and fold it all together. Pour the cream over the cooled chocolate cake and place the cake in the fridge for a few hours before serving.
