Deep fried Brown Beech mushrooms with fresh truffle

  • Brown Beech mushrooms

  • 2 dl flour

  • 1 dl of malt beer

  • salt and pepper

  • 1 truffle

  • neutral oil

Clean the mushrooms. Whip flour and beer with some salt and pepper. Dip the mushrooms into the dough and fry them in neutral oil. Serve the fried mushrooms with grated fresh truffle and truffle mayo.

 

Truffle mayo:

  • 1 egg yolk

  • 1 tablespoon of white wine vinegar

  • 1 teaspoon dijonsennp

  • neutral oil

  • 1 teaspoon truffle oil

  • salt and pepper

Pisk æggeblomme, hvidvins eddike og dijonsennep sammen. Hæld olien lidt efter lidt samtidig med at der piskes. Når mayonaisen har den rette cremet konsistens piskes der trøffel olie i. Smag til med salt og peber.
