Deep fried prawn tortillas with pineapple and chili salsa and chili/paprika mayo

Deep fried prawn tortillas with pineapple and chili salsa and chili/paprika mayo

What you need:

  • 8-16 prawns, without shell and deveined

  • 1 egg, whisked

  • Panko bread crumbs

  • salad (what ever you have)

  • 8 small tortillas (15cm)

  • salt and pepper

  • vegetable oil for frying

Pineapple salsa...

  • 3 slices of fresh  pineapple, finely diced

  • 1–2 chillies, seeded and finely diced

  • 2 tsp white wine vinegar

  • 2 tsp extra virgin olive oil

  • mint leaves, roughly chopped

  • coriander leaves, roughly chopped

  • mix all ingredients

Chipotle mayonnaise...

  • 1 chilli, finely chopped

  • smoked paprika

  • 125g mayonnaise

  • 125g shun

  • 1½ tbsp lime or lemon juice

  • mix everything

 

Method:

  • heat the oil to 180 degrees

  • dip prawns in the whisked egg

  • dip prawns in the Panko bread crumbs

  • fry for 1-2 min. until golden brown

  • put on some kitchen paper

  • heat the tortillas in oven or in a dry pan., makes sure they does not get too much heat and get stiff!

  • add some salad on top of the tortillas

  • add the pineapple salasa

  • add one or two prawns

  • add some mayo

  • enjoy
