Doughnut holes with apple

  • 180 g of wheat flour

  • 1 tbsp. vanilla sugar

  • 1 teaspoon ground cardamom

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon ground ginger

  • 1 tsp. baking powder

  • 1/4 tsp. salt

  • 3 dl. buttermilk, milk or beer

  • 2 eggs divided into whites and yolks

  • 1 apple

  • butter

 

Separate the yolk from the whites. Beat egg whites until stiff. Mix the dry ingredients and add milk (or take buttermilk or beer) and the egg yolks. Mix the stiff egg white gently into the dough. Let the dough rest 1/2 hour. Cut the apple into small cubes. Heat a dumpling pan with a little butter in the holes. Pour a little batter into the holes and place a piece of apple in each. Fry the doughnut holes at a moderate heat.
