Fishcakes of cod and salmon with pickles

Fish Cakes:

  • 500 cod fillets

  • 2-3 slices of smoked salmon

  • 1 egg

  • 1/2 dl whipping cream

  • 1 tablespoon flour

  • salt and pepper

  • butter for frying

Add cod fillets into a food processor or chop them coarsely. Stir in egg, flour and cream. Chop the salmon slices coarsely and fold into mixture. Add salt and pepper. Form small balls and fry them in butter under medium heat.

 

Pickles:

  • 1 egg yolk

  • 1 teaspoon apple vinegar

  • about 3 dl sunflower oil

  • 1 teaspoon mustard

  • 1/2 fennel

  • 2-3 tablespoons capers

  • 1 carrot

  • 1/3 cauliflower

  • salt and pepper

Beat the egg yolk with apple vinegar and mustard. Add the sunflower oil in a thin stream while whisking. Keep going until it has the proper mayonaise thickness. Steam carrot tender. Grate all the vegetables and toss it into the mixture. Add chopped capers. Season with salt and pepper.
