Focaccia bread with thyme, rosemary, sage, garlic, olives and cherry tomatoes

What you need:

  • 600 g of Manitoba wheat flour

  • 3.5 dl water

  • 15 g of salt

  • 50 g yeast

  • 1 handful of fresh herbs (e.g. thyme, rosemary, basil and sage)

  • 1 clove of garlic

  • cherry tomatoes

  • 1 handful of black olive without pits

  • 1/2 dl olive oil

  • salt

 

Method:

  • Dissolve yeast in the lukewarm water

  • Add salt and pour it into the flour

  • Run the dough for approx. 10 minutes on kitchen machine with dough hook

  • Chop herbs and garlic. 

  • Mix the herbs and garlic with the olive oil 

  • Chop the black olives coarsely and turn thoroughly into the dough

  • Pour the dough into an olive oil greased baking pan and allow it to rise to double size. Approx. 1.5 hours.

  • Butter the spice mixture over the dough and squeeze halved tomato pieces into the dough

  • Bake in a 200 degree hot oven for approx. 25 minutes.

  • Drizzle with salt on top
