Gratinated clams

Gratinated clams

A fingerfood dish that is very quick to do and perfect for sharing on a romantic evening.

What you need:

  • 1 kg of clams

  • 1 shalotte onion

  • Parmesan cheese

  • olive oil

  • butter

  • parsley

  • good bread

  • salt and pepper


  • Clean the clams under cold water. Discard all clams that are open or has a tiny hole at where the shell hinge is

  • Chop the onion very finely

  • Chop the parsley finely

  • Heat up the oven on full grilling temp.



  • Heat up a large frying pan

  • Add a little oil

  • Add a good lump of butter

  • Add onions and fry only shortly ( they should not take on any color)

  • Add half the chopped parsley

  • Season with only a little salt and pepper

  • Add the clams (they should cover the pan in one layer only)

  • Enjoy seeing the clams open up one after one while you have a sip of a cold glass of Chardonnay

  • Drizzle over plenty of some freshly grated Parmesan cheese

  • Place the pan directly under the grill for 2-3 min

  • Take out the pan ( make sure you use a oven mitt as handle of pan is hot)

  • Drizzle with remaining parsley

  • Serve in the pan immediately

  • ...with some good bread and olive oil

  • ...and not to forget, more of the Chardonnay
