Green herb potato mash,fried chorizo, red onions, sundried tomatoes and courgettes
For the mash:
1 kg potatoes
1 handful fresh parsley
1 handful fresh chervil
1 handful fresh chives
50 g of butter
salt and pepper
For the topping:
1 chorizo sausage
1 dl chopped sun-dried tomatoes
4 red onions
Boil the potatoes until tender in unsalted water.
Blend the herbs with a bit of the potato water.
Add the blended herbs and butter to the boiled potatoes.
Blend or mash it until desired coarseness.
Season with salt and pepper.
Cut the chorizo sausage and squash into cubes.
Cut the onions into thin strips.
Fry the chorizo cubes first on dry pan.
Add a little olive oil and onions.
Add the sun-dried tomatoes and the diced squash,
Serve the green mash with the chorizo mixture and a little fresh thyme on top.
