Green kale soup with beets and chorizo sausage

A perfect dish for the autumn season

What you need:

  • 500g green fresh kale, finely chopped

  • 1 onion, finely diced

  • 2 garlic cloves

  • small beets of various arts, peeled and cut into quarters

  • 200g chorizo sausage, cut in 5mm thick slices

  • 1l vegetable stock

  • olive oil

  • salt and pepper

Method:

  • In a large pot fry the chorizo in a little olive oil

  • Take up the chorizo and set aside

  • In the pot fry now the onion and the garlic

  • Add the vegetable stok

  • Add the green kale

  • Bring to a boil

  • Add the beets

  • let boil for 10 min.

  • With a slotted spoon take up, the beets and set aside

  • With a stick blender, blend the soup to desired texture

  • Let boil for another 5-10 min.

  • Put back the beets and chorizo

  • Season with salt and pepper

  • Serve in deep plates eventually with good bread
