Green kale soup with spicy chorizo and apples

A very quick and easy recipe for a healthy soup in the winter time

What you need:

  • 300 g of chopped fresh green kale

  • 3 potatoes,  diced

  • 1 onion finely chopped

  • 1 garlic finely chopped

  • 1.5 l vegetable stock (2 dices)

  • 200g of spicy chorizo sausage

  • 1 apple diced

  • hazel nuts for garnish

  • salt and pepper

  • olive oil

Method:

  • Fry the onion and garlic in olive oil under medium heat, that they do not take color

  • Add the stock ( best is to boil 1.5 l of water and add the vegetable stock dices, ready to go into the pot)

  • Add the potatoes

  • Let cook until potatoes are cooked ( 10-15 min)

  • Add the green kale

  • Let simmer for 3-5 min

  • Slice the chorizo

  • Fry the chorizo in a pan until they get a crust

  • Discard the excessive fat

  • Fry shortly the hazel nuts on a dry non slip pan

  • Blend the soup that it gets an even and smooth texture

  • Be careful with adding salt because of the chorizo sausage might be adding enough saltiness to the dish

  • Serve in warm deep plates with diced appels and sprinkled with nuts as shown
