Guacamole with lobster and tomato salsa

Guacamole with lobster and tomato salsa

Guacamole:

  • 2 avocados

  • juice from 1/2 a lemon

  • 1 clove of garlic

  • 1 tablespoon shun or youghurt

  • salt and pepper

Blend everything.

Tomato Salsa:

  • Mixed variety tomatoes

  • spring onions

  • green and red chili

  • olive oil

  • salt and pepper

Mix roughly diced tomatoes along with finely chopped spring onions and chili. Mix it in a little olive oil, salt and pepper.

Top the guacamole with tomato salsa and lobster meat. Serve with taco shells.
