Herrings salad with onions and quail eggs in a rye bread cup

What you need:

  • Pickled herring

  • Quail eggs (boiled)

  • ½ dl chopped cornichons

  • ½ dl yogurt

  • ½ dl mayonnaise

  • 1 tsp Dijon mustard

  • 1 tbsp curry

  • 1 tsp lemon juice

  • A little sugar

  • 1 finely chopped onion

  • 1 apple

  • Red onion rings

  • Mixed salads

How to make it:

  • Cut herring into smaller pieces.

  • Cut the apple into cubes and chop the onion and cornichons.

  • Mix together yogurt, mayonnaise, Dijon mustard, curry powder, lemon juice and a little sugar.

  • Then mix herring, onions, cornichons and apple cubes in the dressing. 

  • Add a little mixed salad in the crispy rye bread cups, and top with pickled herring and quail eggs.

  • Garnish with red onion rings.
