Hot smoked salmon and lumpfish roe salad as fingerfood

What you need:

  • 1 bunch of asparagus

  • 200 g of small new potatoes

  • 1oo g lumpfish roe

  • 2 pieces of hot-smoked salmon fillets

  • pea shoots

  • 1 red onions

  • 1 dl skyr / yogurt

  • 1 dl mayo

  • 1 tablespoon mustard

  • salt and pepper

  • little gem salad

 

Method:

  • Boil the potatoes to tender

  • Boil asparagus for 30 seconds

  • Finely chop the red onions

  • Mix lumpfish roe, skyr, mayo, mustard and red onions

  • Season with salt and pepper

  • Turn the halved potato pieces, the salmon pieces, the sprouts and the asparagus pieces carefully into the mixture

  • Serve the salad on little gem leaves and serve.
