Kohlrabi ravioli with salmon and curd cheese

What you need:

  • 120g smoked salmon slices

  • 1 organic lemon

  • 1-2 thin slices of rye bread

  • chives, finely chopped

  • 100g curd cheese

  • 100g kohlrabi

  • 1 tbsp of sherry vinegar

  • cress

  • salt and pepper

 

Method:

  • Cut the salmon. slices in pieces of 4x2 cm

  • grate off the zest from lemon

  • Squeeze out the lemon juice

  • Mix the juice and zest with salmon pieces

  • Toast the rye bread and break it into crumbles

  • Mix the curd cheese and the chopped chives

  • Season with salt and pepper

  • Slice the Kohlrabi in very thin, nearly transparent slices on a mandolin iron

  • Let the slices marinate in sherry vinegar for a few minutes

  • Arrange the slices as raviolis with curd cheese and salmon as filling

  • Drizzle with rye bread crumbles and cress on top

  • Perfect finger food done :)
