Lamb in white wine and festive spices

  • 500 g lamb meat, diced

  • 10 kumquats

  • 1 cinnamon bar

  • 2-3 star anise

  • 1 bay leaf

  • 6-8 cloves

  • 6-8 cardamom pods

  • 1/2 l white wine

  • 2 carrots

  • 1 onion

  • 2 cloves garlic

  • little flour

  • 1 teaspoon dried thyme

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • oil

  • salt and pepper

Chop the onion and garlic. Peel the carrots, halve the kumquats and remove the seeds. Turn over the lamb in a little flour and brown it in oil. Fry the onion and garlic. Add the spices and pour the white wine. Let it simmer on low heat for about 45 minutes. Add the carrot cubes and kumquats. Let it simmer for another 30 minutes. Season with salt and pepper. Serve the lamb casserole with mashed potatoes or celery puree.
