Lime soup of chicken with salsa and deep fried tortilla sticks

Soup:

  • 1 chicken

  • 2 l of water

  • 1 tablespoon dried oregano

  • 4 cloves garlic

  • 1 onion

  • 10 peppercorns

  • juice of 3-4 limes

  • salt and pepper

Place chicken in a pot with oregano, onion, garlic and pepper grains. Pour water in and cook for about 1 hour. Remove foam impurities along the way. Remove the chicken and sieve the broth. Reduce the broth and add the lime juice. Season with salt and pepper. Pick the meat off the chicken.

Fried tortillas:

  • 2 whole wheat tortillas

  • sunflower oil

Cut tortillas into strips and fry them until crisp in oil. Sprinkle them with salt on paper towels.

 

Salsa:

  • 1 avocado

  • 1 mango

  • 1 green chili

  • 1 handful fresh parsley

  • 1 handful fresh coriander

  • 1 red onion

  • 2 cloves garlic

  • 2 tomatoes

  • juice of 1 lime

  • salt and pepper

  • 1-2 tablespoons olive oil

Take out the seeds of tomatoes and cut the flesh into cubes. Cut the avocado and mango into cubes. Sprinkle some lime juice on the avocado cubes. Finely chop the onion, chili, garlic fine. Roughly chop the parsley and cilantro. Mix everything together and pour lime juice and olive oil over. Season with salt and pepper.
Put some chicken pieces in a shallow dish and pour the soup over. Top with salsa, a few slices of lime and fried tortillas strips.
