Linguine with chanterelles and blackberries

What you need:

  • 500g linguine

  • 200g fresh chanterelles

  • 100 g blackberries

  • 1 shallot

  • 1 garlic clove

  • fresh thyme

  • sweet balsamic vinegar

  • butter

  • olive oil

  • Parmesan cheese

  • salt and pepper

 

Method:

  • Heat up 4 plates in oven at 50 degrees

  • Put a pot with 3 l og salted water to the boil

  • Finely chop the shallot, garlic clove and most of the thyme

  • Boil the linguine for 12 min.

  • Fry the shallot, finely chopped thyme and garlic in butter and olive oil, in a wok pan

  • Add a tbsp sweet balsamic vinegar and let boil for 3 min

  • Add the chanterelles

  • Add the blackberries

  • Put the pasta into a sieve and then into the wok pan

  • Season with salt and pepper

  • Give it a toss

  • Serve immediately in the warm deep plates with little thyme on top
