Linguine with spicy clams and blueberries

What you need:

  • 500g linguine

  • 250g fresh clams

  • 100g blueberries

  • 1 shallot

  • 1 garlic clove

  • chili flakes

  • olive oil

  • 1 dl. white wine

  • butter

  • Parmesan cheese

  • purple edible flowers :)

 

Method:

  • Clean the clams in cold water and discard any that are crushed or have a hole back at the hinge.

  • Put the clams in a bowl filled with cold water and put them in the fridge for an hour ( they will spit out any sand inside)

  • Finely chop the shallot and the garlic clove

  • Bring a pot with 3 l of salted water to the boil

  • Boil the pasta for 10-12 min

  • in the meantime...

  • In a skillet or wok pan, fry the shallot, some chili flakes and the garlic for 2 min under high temp.

  • Add white wine

  • After 5 min add the blueberries

  • After 1 min add the clams. Put a lid on

  • Let cook for 3 min. Stir gently a couple of times that the clams can open up

  • Add the pasta to the skillet with clams

  • Add a good lump of butter

  • Toss the skillet

  • Serve in warm deep plates

  • Drizzle with some extra chili flakes and a little olive oil

  • Drizzle with some grated Parmesan cheese on top

  • Garnish with a few purple flowers

  • Lit a candle and play some music of the late Prince
