Minced beef steak with mash of cauliflower, broccoli and artichoke hearts

Steak:

  • 500g minced beef

  • 1 egg yolk

  • 1 tablespoon mustard

  • 1 tablespoon Worcestershire sauce

  • salt and pepper

  • olive oil

Mix egg yolk, mustard, Worcestershire sauce, salt and pepper well as beef. Form 4 patties and fry them in olive oil.

Cauliflower and broccoli puree:

  • 1 cauliflower

  • 1 broccoli

  • 1 can artichoke hearts

  • 25 g of butter

  • 50 g parmesan

  • salt and pepper

  • spring onions and broccoli stick for topping

Cook the cauliflower and broccoli until tender, but save the broccoli stalk. Slice the broccoli stalk on a mandolin iron into thin strips and placed in ice-cold water. Mash cauliflower and broccoli coarsely with artichoke hearts. Add the butter and parmesan. Season with salt and pepper.

Serve steaks with mash, chopped spring onions and crisp broccoli strips on top. Drip possibly with a little parsley oil.
