Mussels and caramelised brussels sprouts

What you need:

  • 1 kg fresh blue mussels

  • 400g brussels sprouts

  • 1 red chili

  • 1 red onion

  • 2 garlic cloves

  • fresh parsley

  • Parmesan cheese

  • lemon

  • 1-2 dl white wine

  • almonds

  • butter

  • olive oil

Prepping:

  • Clean the mussels and discard any broken ones or open ones that does not close with a hard tap

  • Cut of the bottom of the brussels sprouts and cut in halves

  • Finely chop the onion, chili, parsley and garlic

 

Method:

  • Heat up on medium temp. some olive oil in a cast iron pan

  • Heat up some olive oil, the onion and garlic in a large pot

  • When onion get transparrent add white wine and bring to a boil

  • Add the mussels and put a lid on. Let cook for 7 min with a light shake a couple of times

  • Place the brussels sprouts in the pan with cut side down

  • Leave them untouched for them to caramelise

  • After 4 min. add the chili

  • Season with pepper and a little salt

  • Take the brussels sprouts away from pan and set aside

  • Take up the mussels and set aside. Keep the juice from mussels

  • Add a good lump of butter in the iron pan

  • Whisk in the mussels juice on medium temperature

  • Reduce slightly

  • Add lemon juice to taste

  • Turn of the heat

  • Add back in the pan the brussels sprouts

  • Drizzle with a little parmesan cheese

  • Drizzle with chopped almonds

  • Add the mussels as well

  • Drizzle with finely chopped parsley

  • Drizzle with lemon zest

  • Serve with good bread and a glass of white wine
