Mussels in beer with beetroot sprouts

What you need:

  • 1 kg of mussels

  • 1-2 tsp of ginger/chili sauce (recipe further down)

  • 1 shallot

  • olive oil

  • 2 dl of beer (ginger ale or stout)

  • beetroot sprouts

  • parsley

  • good bread

  • butter (for frying the bread)

  • pepper

  • 4 deep plates heated in oven at 50 degrees

 

Method:

  • Clean the mussels and discard open ones that does not close when tapping hard on table

  • In a wok or frying pan, on full heat, add chopped shallots and 1-2 tsp of the ginger/chili sauce

  • Let fry for 2 min

  • Add a little pepper

  • Add 2 dl of beer and bring to a boil

  • Add a little parsley

  • Add the mussels and put on a lid

  • Cook for 5-6 min

  • In the meantime, fry the bread in butter in a separate frying pan

  • Serve in warm plates with the beetroot sprouts and butter fried bread

The Ginger/chili sauce:

What you need:

  • 2 garlic cloves

  • 5 cm ginger, peeled

  • 1 red chili

  • 1 tbsp red curry paste

  • 2 tbsp oyster sauce

  • juice of 2 lime or one lemon

  • 1 tbsp whitevine vinegar

Method:

Blend all ingredients until you have a perfect sauce with no lumps. Put aside
