Mussels in Blue Cheese
What you need:
1.5 kg of blue mussels
2 dl white wine
1 small bunch of parsley
2 cloves of garlic
1 tbsp of butter
2.5 dl cream
100 g blue cheese
salt and pepper
Rinse and clean blue mussels. Discard any crushed or not closing when tapped
Finally chop onion and garlic.
Sauté onions and garlic in butter in a large wok pan.
Add white wine and parsley.
Bring to a boil
Add the mussels
Put a lid on and let boil for approx. 5 minutes.
Pour mussels into a sieve and keep the liquid
Put liquid back into the wok pan
Reduce the mussels liquid with a third
Take the pot from heat
Add the cheese and let the cheese melt while stirring.
Season with pepper.
Serve the blue mussels in deep warmed up plates and pour the cheese sauce over just before serving.
Sprinkle with a little fresh parsley.
