Omelette with mushrooms and truffle

What you need:

  • 2 eggs

  • 1 handful of grated parmesan

  • 1 handful mushrooms

  • 1/2 teaspoon nutmeg

  • 1/2 red onion

  • truffle

  • salt and pepper

  • butter

How to make it:

Chop onions finely. Fry the onions and mushrooms in butter. Beat eggs with muskatnør, salt and pepper. Add the grated parmesan. Remove temporarily onions and mushrooms from pan and pour the egg mixture in the pan after a few seconds pour onions and mushrooms back over the egg mixture. Roll the omelette along and serve with freshly grated truffle.
