Orange and lemon marinated trouts

What you need:

  • 4 trout fillets

  • 5 tbsp olive oil

  • 5 tbsp dry white wine

  • grated zest from 1/2 lemon

  • grated zest from 1/2 orange

  • orange slices

  • lemon slices

  • 12 crushed coriander seeds

  • 2-3 twigs thyme

  • 1 tablespoon finely chopped fresh rosemary

  • 2 laurel leaves

  • 2 pearl onion in thin slices

  • 2 finely chopped garlic cloves

  • salt and pepper

 

Method:

  • Rinse the fillets and put them on some kitchen paper to remove water

  • Season them with salt and pepper

  • Put them side by side in a heat resistant dish

  • In a small casserole...

  • Mix white wine and olive oil

  • Add the orange and lemon zest, garlic, pearl onions and spices

  • Heat shortly up the mixture to boiling point and then pour it over the fillets

  • Now place the heat resistant dish in oven pre heated top 150 degrees

  • Keep it there for approx 5 min. depending how thick the fillets are. The fish should never become fully cooked or tender

  • Take out of oven and let it rest for a moment

  • Place the lemon and orange slices over the fillets

  • Then put the dish in the fridge overnight

  • Serve the marinated fillets with a green salad and small new potatoes
