Orange cake with white chocolate topping
2 organic oranges
75 g of whole grain corn flour
175 g almond (blended whole almonds in shell)
100 g of white chocolate
pickled orange pieces or grated zest of 1 organic orange
Wash the oranges and boil them, just covered in water for 1 hour. Cool. Slice them and remove any cores. Blend them to a coarse pulp. Beat eggs and sugar in 8 min. at high speed, until it is completely and finely light yellow. Fold the orange mash, cornflour, blended almonds and baking powder into the dough and place in a greased and sugar sprinkled springform. Bake for 1 hour at 180 °.
Melt the chocolate over a water bath. Pour the melted chocolate out over the cooled cake and decorate with candied orange pieces or grated orange peel.
