Pappardelle with chantarelles, blackberries, walnuts and thyme

What you need:

  • 400 g Pappardelle pasta

  • 300 g chanterelles

  • 50 g blackberries

  • walnuts

  • fresh thyme, chopped

  • 1 shallot, diced

  • 1 garlic clove, sliced

  • butter

  • olive oil

  • ½ dl white wine

  • parmesan cheese

 

Method:

  • Clean the chanterelles for any dirt

  • Boil the pasta in plenty of salted water

  • In a large wok pan on medium heat, add a little olive oil and a big lump of butter

  • Add the shallot and garlic and let sear for a minute

  • Add the chanterelles, walnuts and the chopped thyme

  • Let fry for 2-3 min. Toss a couple of times

  • Add the white wine

  • Let the white wine reduce a little

  • Add the cooked pasta

  • Add a lump of butter

  • Toss to mix all parts

  • Season with salt and pepper

  • Eventually add a little pasta water if you want a more creamy texture

  • Add the blackberries, toss lightly and serve immediately in hot plates

  • Drizzle with some freshly grated Parmesan cheese
