Parma ham Open sandwich with Ricotta, pickled onions, carrot, truffle oil, grated hard cheese and cress

What you need:

  • Sour dough bread

  • Ricotta cheese

  • Parma ham

  • Red onions

  • Carrots (any color)

  • Truffle oil

  • Any hard cheese

  • Cress

  • Salt and pepper

 

Method:

Pickled onions:

  • bring to a boil 1dl vand and 1 dl sugar until the sugars has dissolved

  • Add the sliced oinons

  • let simmer for 2 min.

  • Store in a clean glass and let cool down

Carrots:

  • Slice thinly on a Mandolin iron and put in ice cold water

Build:

  • Toast the bread

  • add a thick layer of Ricotta cheese, then slices of Parmaham, pickled onions and carrots

  • Sprinkle with Truffle oil, salt and pepper, grated hard cheese and cress
