Pasta Bolognese with zucchini

What you need:

  • 3 carrots

  • 3 sticks celery

  • 1 onion

  • 2 cloves garlic

  • 2 cans peeled tomatoes

  • 1 tin concentrated tomato paste

  • 1-2 tsp dried thyme

  • 1-2 teaspoons dried oregano

  • 1-2 tsp dried basil

  • 1-2 tsp smoked paprika

  • 500g minced beef

  • 1 squash

  • 500 g of pasta

  • parmesan

  • little fresh thyme

  • olive oil

  • salt and pepper

How to make it:

Finely chop the onion and garlic. Cut carrots, squash and celery into small cubes. Separate squash cubes of carrots and celery. Saute the onion and garlic in oil. Add the meat and fry it. Then add carrots and celery cubes. Stir all. Add the spices and tomato paste. Sauté briefly and then add the peeled tomatoes. Let it simmer for 1 hour. Season with salt and pepper along the way. For the last few minutes before serving add the squash cubes. Serve with pasta, grated Parmesan and a little fresh thyme.
