Pasta salad in a dressing of shun/yoghurt and Parmesan cheese with Teriyaki salmon, avocado and coriander sprouts

What you need:

  • 250 g of fresh salmon

  • Teriyaki sauce

  • black sesame seeds

  • coriander sprouts

  • lettuce

  • Pasta (any form factor you like)

  • 1 avocado

  • lemon  for the avocado)

Dressing for the pasta salad:

  • 2 dl shun or yoghurt

  • 200 g fresh spinach

  • 2 cloves of garlic

  • 1 onion

  • 100 g parmesan

Blend all ingredients

Baked Salmon:

  • Place the salmon in a oven proof dish

  • brush with teriyaki sauce

  • Season with pepper

  • Bake for 10 min at 180 degrees in oven

  • let cool down

Serving:

  • Mix the dressing with the freshly cooked, however chilled pasta

  • Add coarse chopped lettuce

  • Top with chunks of salmon

  • Top with slices of avocado

  • Sprinkle with sesame seeds and koriander sprouts
