Paté with red cabbage salad, oranges, apples and nuts

Paté:

  • 1 dl cream

  • 4 cloves garlic

  • 2 large red onions

  • 300g chicken livers

  • 1000g veal and pigmeat

  • 2 eggs

  • 200g mushroomes

  • 75g hazelnuts

  • salt and pepper

  • 1 tsp. dried thyme

  • 1 tsp. allspice

  • 1 tsp. dried rosemary

  • 1 tsp. ground ginger

  • 1/2 tsp. ground cloves

  • 1 cup brandy

  • 2 packets of bacon

  • 4-5 bay leaves

Chop the garlic and shallots finely and let simmer in a little butter in a frying pan together with the mushrooms. Chop the nuts coarsely. Chop the chicken livers fine. Chop the veal and pork in slightly bigger pieses. Mix meat, onion, mushroom, nuts, eggs, spices, brandy, cream thoroughly.
In an suitable form place 4-5 bay leaves and then completely cover mold with bacon slices with some hanging over the molds rim to later fold over the top. Pour the stuffing in the form and fold the bacon slices over. Put it in a water bath in the oven and bake for about 1 1 / 2-1 3/4 hours at 175 degrees. Let cool the pâté. Let rest in the refrigerator for a day.

Red Cabbage Salad:

  • 1/2 red cabbage

  • 1 orange

  • 1 apple

  • 50 g of hazelnuts

Cut red cabbage very finely. cut out filets from orange. Cut the apple into cubes or slices. Chop the nuts. Mix all ingredients and pour over the dressing.

Dressing:

  • 1 teaspoon Dijon mustard

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 6 tablespoons olive oil

  • 1/2 teaspoon dried baslikum

Mix all ingredients.
