Pea soup with truffle oil

What you need:

  • 4 slices of Parma ham

  • 50 g grated parmesan cheese

  • 250 g peas ( frozen are fine too)

  • 5 dl vegetable stock

  • 0.5 dl cream

  • Fresh thyme

  • Truffle oil

  • Salt and pepper

Method:

  • Place the grated parmesan cheese thinly on a piece of baking paper

  • Also place the slices of ham

  • Bake until golden and crispy at 200 C°

  • Add peas, stock, thyme and cream into a pot

  • Bring to a boil

  • Let boil for 2-3 min

  • Blend with a stick blender and season with salt and pepper

  • Serve in deep plates and drizzle with truffle oil and with the crispy ham and Parma ham
